This simple salsa is chock-full of colorful veggies and is perfect with your favorite tortilla chips. It’s also a tasty, good-for-you topping to spoon over grilled chicken or fish.
1 (15 ounce) can black eyed peas, rinsed and drained1 (4 ounce) can green chilies1 (14.5 ounce) can whole kernel corn, drained1 jar pimentos, drained1/2 cup chopped onion1/2 cup chopped green bell pepper1 (8 ounce) bottle Italian salad dressing
- In a large bowl combine all ingredients; stir to blend.
- Cover and refrigerate several hours or overnight.
- Serve with crackers or chips. Great served as a topping for meat or potatoes.
