1 pound lean ground beef, or shredded beef1 medium onion, chopped2 garlic cloves, minced1 tablespoon cumin1 teaspoon chili powder1 (4 ounce) can green chilies10 (6 inch) flour tortillas, or corn tortillas2 cups shredded cheddar cheese1/4 cup reduced fat sour cream
- Preheat oven to 350° F. In a large skillet brown ground beef and onion, over medium heat, until no longer pink. Drain off excess fat and stir in garlic, cumin, chili powder, ¾ cup petite diced tomatoes and tomato sauce.
- Grease a 9 x 13 inch baking dish. Spread about ¼ cup meat mixture and 2 tablespoons of cheese down the center of each tortilla. Roll up and place seam side down in the baking dish. Pour remaining petite diced tomatoes over tortillas and top with remaining cheese.
- Bake for 20 to 25 minutes or until cheese is melted. Garnish with sour cream.
