Our friend Riccardo shared his rich homemade tomato sauce recipe. It’s perfect for serving over angel hair or other delicate pasta as your first course (“primo” in Italian) for Sunday dinner with the family.

Ingredients

5 tablespoons extra virgin olive oil2 medium onions, finely chopped2 garlic cloves, minced1 teaspoon dried basil1 teaspoon dried oreganoSalt and black pepper to taste
Instructions
  • Heat oil in large sauce pan. Sauté onions and garlic until browned. Add whole peeled tomatoes with juice, basil, oregano, salt and black pepper.
  • Cover with lid and cook for 10 minutes. Open the lid and mash the tomatoes until pieces are still visible. Cook uncovered for another 15 to 20 minutes.
  • Serve over your favorite type of pasta.
