Mandarin Orange and Chicken Pasta Salad
Ginger-sesame vinaigrette tops this surprising Asian inspired pasta salad. Full of fresh, crisp vegetables and sweetened with mandarin oranges. It's protein-packed, making it a perfect choice for a light meal.
2 teaspoons grated ginger root1/3 cup rice vinegar1/4 cup orange juice1/4 cup vegetable oil1 teaspoon toasted sesame oil1 (1 ounce) package dry onion soup mix2 teaspoons sugar1 garlic clove, pressed1 (8 ounce) package bow ties pasta, cooked, drained and cooled1/2 cucumber, peeled, seeded, halved lengthwise and sliced1/2 cup sliced red bell pepper1/2 cup chopped red onion2 (14.5 ounce) cans Red Gold® Petite Diced Tomatoes 14.5 oz or 1 (28 ounce) can Red Gold® Petite Diced Tomatoes 28 oz, drained1 carrot, shredded1 (6 ounce) package fresh baby spinach, chopped1 (11.5 ounce) can mandarin orange segments, drained2 cups diced cooked chicken1/2 cup sliced almonds
- To make dressing: place ginger, vinegar, orange juice, vegetable oil, sesame oil, soup mix, sugar and garlic in a mason jar. Cover and shake to combine. Refrigerate until needed.
- To make salad: place pasta, cucumber, bell pepper, onion, petite diced tomatoes, carrots, spinach, mandarin oranges, chicken and almonds; toss to combine. Pour dressing over salad mixture and toss again to coat evenly. Serve immediately.
