Creamy Caprese Pasta

Craving everyone's favorite summer salad? This easy-to-make pasta dish let's you enjoy it all year long. Our whole peeled tomatoes cook with pasta, garlic, fresh basil, cream and gets topped with plenty of cheese; all in one skillet. This creamy pasta dish is ready in under thirty minutes for a quick and easy family meal.


4 cups water2 tablespoons extra virgin olive oil1 pound (16 ounce) box penne pasta1 (28 ounce) can Redpack® Whole Peeled Plum Tomatoes in Puree 28 oz2 tablespoons Redpack® Tomato Paste 6 oz3 garlic cloves, mincedSalt and black pepper to taste1/2 cup chopped fresh basil2 tablespoons balsamic vinegar1/3 cup heavy cream, or half and half4 ounces fresh mozzarella cheese, cut into cubesFresh basil leaves and mini mozzarella balls as garnish


  • In a stockpot combine water, oil, pasta, tomatoes, tomato paste, garlic, salt, black pepper, basil and balsamic vinegar. Bring mixture to a boil.Reduce heat and simmer for 10 to 12 minutes or until pasta is cooked and water reduced.
  • Remove from heat and add in heavy cream and cheese cubes. Cover pan and let the cheese melt for about 2 minutes; then stir to combine.
  • Garnish with fresh basil leaves and mozzarella balls, serve immediately.
