4 slices bacon, cut into 1 inch pieces1 large onion, finely chopped3 garlic cloves, chopped2 (14.5 ounce) cans Red Gold® Petite Diced Tomatoes 14.5 oz, drained or Red Gold® Petite Diced Tomatoes 28 oz, drained2 1/2 cups of chicken stock3 cups bow ties pasta, uncooked1/2 teaspoon salt1/8 teaspoon black pepper1/3 cup grated parmesan cheese
Instructions
- In a large (10") skillet, cook bacon over medium-high heat for 8 to 10 minutes or until brown and crispy. Remove bacon from pan and drain on paper towels, reserving 1 tablespoon of bacon fat. Reduce heat to medium and add onion and garlic to the tablespoon of reserved bacon drippings in the skillet. Cook 5 minutes until onion is tender, stirring frequently.
- To the skillet add the pasta, top with the diced tomatoes, half the cooked reserved bacon, salt, black pepper and chicken broth. Cook 13-15 minutes, or until pasta is tender and mixture is desired consistency. Top with remaining bacon and grated parmesan cheese before serving.
