2 cans Red Gold® Whole Peeled Tomatoes 28 oz, drained2 teaspoons canola oil1 white onion, quartered1 jalapeno, halved2 garlic clovesjuice of 1 lime1 bunch of fresh cilantro, 2 tablespoons reserved for garnishsalt to tastetortilla chips, for serving
Instructions
- Drain the cans of Red Gold Whole Peeled Tomatoes and place the tomatoes in the blender.
- In a skillet over medium-high heat, warm up the canola oil. Sear the onion, jalapeno, and garlic on all sides until golden. Add the vegetables to the blender.
- Add the juice of one lime to the blender, reserve about 2 tablespoons of cilantro for serving and add the rest of the bunch to the blender, stems included. Cover and blend for 1 minute. Use a tortilla chip to taste for seasoning, add salt, and blend again for one minute.
- Pour into a bowl, top the salsa with chopped cilantro, and serve with tortilla chips. Enjoy!
