1 head of garlic3 tablespoons neutral oil6 tablespoons softened butter, unsalted1 can Red Gold® Mild Diced Tomatoes + Green Chilies 10 ozKosher salt, to taste1 tablespoon fresh chopped parsley1 loaf of Italian bread1 cup shredded mozzarella or cheddar cheese
Instructions
Roast the Garlic
- Preheat oven to 400°F. Remove the papery outer layers of the garlic bulb. Cut 1/4-1/2 inch off the top to expose the cloves.
- Place garlic on foil or in a small ramekin, drizzle with oil, cover and bake for 30-40 minutes, or until garlic is soft and golden.
Prepare Garlic Butter Mixture:
- Squeeze the roasted garlic cloves into a bowl.
- Add softened butter, drained Red Gold Mild Diced Tomatoes + Green Chilies, salt and parsley. Mix until smooth.
Assembly Cheesy Garlic Bread:
- Slice the Italian bread loaf in half lengthwise. Spread the garlic butter mixture evenly over each bread half. Sprinkle shredded cheese generously on top of garlic butter.
- Place bread on a baking sheet, cut side up, and bake at 400°F for 10-12 minutes, or until cheese is melted and bread is toasted. Broil for an additional 1 minute for extra golden-brown color.
