A classic Italian dish with chicken, onions, mushrooms and bell pepper combined with crushed tomatoes all in one pan for a perfect weeknight meal.
1 whole chicken, cut into pieces or legs and thighs1 teaspoon extra virgin olive oil1/4 cup chopped green onions2 (15 ounce) cans Red Gold® Crushed Tomatoes 15 oz or 1 (28 ounce) can Red Gold® Crushed Tomatoes 28 oz2 cups sliced fresh mushrooms1 medium green bell pepper, chopped2 garlic cloves, minced1/2 teaspoon black pepper1 teaspoon dried oregano
- Using a 10 inch skillet, lightly brown chicken pieces in oil over medium heat. Remove the chicken. In the same pan, cook the green onions until tender.
- Add crushed tomatoes, mushrooms, green bell pepper, garlic, black pepper and oregano. Stir to blend.
- Return chicken pieces to skillet and simmer, covered for 30 to 40 minutes. Serve over cooked vermicelli or spaghetti.
