2 cups oil, for frying8-10 corn tortillas1 tablespoon olive oil1-1 1/2 pounds lean ground beef1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 oz, drained1 tablespoon Red Gold® Roasted Garlic Tomato Paste 6 oz4 chipotles in adobo sauce, chopped1 tablespoon taco seasoningsalt and pepper, to taste1/3 cup fresh cilantro, choppedshredded lettuce, for toppingdiced tomatoes, for toppingshredded Mexican blend cheese, for toppingguacamole, for topping
Instructions
- Heat a large saucepan over medium-high heat with the frying oil. Once hot, use stainless steel tongs to place the corn tortillas in the frying oil and bend them into a taco shape. Fry for about 2-3 minutes, working with 1-2 tortillas at a time.
- Once crispy and deeply golden, remove from the oil and place on a paper towel-lined baking rack to drain excess oil.
- In a large skillet over medium-high heat, add the olive oil.
- After a minute, add the ground beef and break it up with a spatula. Cook until browned, about 6-8 minutes.
- Stir in the drained Red Gold Original Diced Tomatoes + Green Chilies and Red Gold Roasted Garlic Tomato Paste.
- Add the chopped chipotles and taco seasoning. Cook for another 2-3 minutes. Season with salt and black pepper to taste. Stir in the chopped cilantro and set aside.
- Serve the chipotle beef in the crispy hard-shell tacos with your favorite taco toppings.
