Ingredients

1/2 pound burrata1/2 cup heavy cream1/2 pound short-cut pasta2 tablespoons olive oil1/2 pound Italian sausage, casings removed1 medium onion, diced1 red pepper, diced1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 ozsalt & pepper to tastered pepper flakes, for serving

Instructions

  • Tear burrata into a few pieces and add to the food processor. Add cream and pulse 10 seconds at a time on low until the texture is whipped and creamy. Set aside for now. 
  • Cook pasta according to the directions on the package.
  • Meanwhile, heat olive oil over medium heat in a large skillet. Add sausage and stir occasionally until cooked through (6-7 minutes). Break up the sausage with the back of a spoon as it cooks.
  • Add onion and red pepper. Stir occasionally until softened, 5-6 minutes.
  • Pour in Red Gold Original Diced Tomatoes + Green Chilies. Heat until most of the liquid has evaporated. Add salt and pepper to taste. 
  • Reduce heat to low and add cooked pasta and whipped burrata to the skillet. Gently toss the pasta until the sauce is creamy and most of the burrata has melted.
  • Serve immediately with red pepper flakes sprinkled on top.  Enjoy!
