3 slices bacon uncooked, small dice*1 cup onion, chopped4 scallions, sliced, green & white parts2 garlic cloves, chopped1 cup red bell pepper, chopped1 cup yellow bell pepper, chopped2 teaspoons smoked paprika1/2 teaspoon salt1/4 teaspoon black pepper2 tablespoons course grain mustard1/4 cup dark brown sugar1 cup Red Gold® Cocktail Sauce with Real Sugar 12 oz2 cans pinto beans, 14.5 oz, 1 can drained, 1 can not drained
Instructions
- Preheat oven to 350°F.
- In a medium skillet over medium-high heat, cook bacon pieces for 3-4 minutes until bacon begins to crisp and the fat is rendering.
- Add onions, scallions (white and green parts), garlic, red and yellow peppers to bacon and cook for 4 minutes until onions just start to turn brown. Add smoked paprika and season with salt and pepper.
- Add the course mustard, brown sugar and Red Gold Cocktail Sauce, mix to dissolve the sugar.
- In a 2-quart oven safe casserole dish, add the beans, the bacon/vegetable/sauce mixture and mix well. Bake for 30-45 minutes until hot and bubbly.
- Remove from oven and allow to cool for a few minutes before serving.
* To cut the raw bacon easier, place in the freezer for 15-20 minutes to firm up but not freeze solid.
