2 store bought cauliflower pizza crusts2 tablespoons olive oilsalt and black pepper to taste1 can Red Gold® Diced Tomatoes Basil, Garlic & Oregano 14.5 oz, very well drained8 oz sliced fresh mozzarella cheese, each slice cut in half1/4 teaspoon crushed red pepper flakes1/4 cup fresh basil leaves, for garnish
Instructions
- Preheat oven to 425°F.
- Place drained diced tomatoes in a food processor and pulse into a course puree. Place in a small bowl and season with salt and pepper to taste.
- Lightly brush crusts with olive oil. Take 1/2 cup of the course pureed tomatoes and spread across each of the crusts to about 1/2 inch of the edges.
- Place 2 half slices of cheese in the middle of the pizza and arrange 6 half slices around the crust in a circle. Sprinkle with crushed red pepper flakes if desired.
- Bake in the oven until cheese is melted and bubbly, about 12-15 minutes. Top with basil, cut each pizza into 6 portions and serve.
