For the Queso

1/2 pound chorizo1/2 pound ground beef1 can Red Gold® Mild Diced Tomatoes + Green Chilies 10 oz2 tablespoons sliced jalapenos1 package cream cheese, 8oz1 to 2 cups shredded cheddar or Monterey jack cheese1 packet taco seasoning1/2 cup salsacubed meltable cheese product, 16 oz2 tablespoons heavy cream, optional

For the Tacos

1 1/4 pounds ground beef1 packet taco seasoning3/4 cup water20 corn tortillas1 1/2 cups neutral oil, for frying

Instructions

For the Queso

  • Preheat your oven to 350°F. Brown the chorizo and ground beef in a skillet, then drain any excess grease.
  • In a baking dish or disposable foil pan, combine the cooked meats, Red Gold Diced Tomatoes + Green Chilies, jalapenos, cream cheese, shredded cheese, taco seasoning, salsa, and cubed meltable cheese.
  • Place the dish in the oven and bake for 15 minutes, stirring halfway through, until the queso is melted and bubbling.
  • For extra creaminess, stir in 2 tablespoons of heavy whipped cream. If the queso is too thick, add more salsa with its juices to reach your desired consistency.

For the Tacos

  • Brown the ground beef in a skillet, then stir in taco seasoning and water. Simmer for 4-5 minutes.
  • Warm the tortillas in the microwave until soft and pliable.  Place a tortilla on a flat surface, add taco filling to one side, and roll it tightly into a tube shape. Place the tacos seam-side down or secure with toothpicks.
  • Heat 1/2 cups of oil in a large pan. Fry the tacos in batches until crispy and golden. Remove and place on a paper towel-lines plate or a cooling rack.
  • Layer the queso and your favorite toppings (such as more diced jalapenos or salsa) in individual serving cups. Add the fried tacos on top for a fun and flavorful presentation.  Dunk, devour and enjoy!
