2 Tablespoons olive oil1/2 onion, finely chopped3 minced garlic cloves1 pound ground turkey1/2 teaspoon Italian seasoning1 package of taco seasoning1 can Red Gold® Petite Diced Tomatoes with Green Chilies 14.5 oz3 red bell peppers, cut in half lengthwise, seeds removed2 cups shredded cheddar cheese
Instructions
- Preheat the oven to 400°F. Line a baking sheet with lightly greased foil.
- In a medium saucepan, heat oil and add in onion and garlic and cook until translucent. Add in ground turkey, cook until browned, about 8 minutes.
- Stir in Italian seasoning, taco seasoning packet, followed by Red Gold Petite Diced Tomatoes with Green Chilies. Cook for another 8-10 minutes, remove from heat.
- Stuff peppers with turkey mixture, place on prepared baking sheet.
- Sprinkle shredded cheese on top then bake for 10-15 minutes. Remove from oven and let cool before serving.
