2 Tablespoons vegetable oil1 yellow onion, chopped1 red bell pepper, seeded and chopped1 pound ground turkey1 Tablespoon taco seasoning3 cups chicken stock1/2 cup Red Gold® Petite Diced Tomatoes 14.5 oz1/2 cup Red Gold® Original Diced Tomatoes + Green Chilies 10 oz1 box pasta, 12 oz1 can corn, drained1 can black beans, drained and rinsedKosher salt and freshly ground pepper, to taste1/2 cup shredded Mexican cheese
Instructions
- Heat oil in large skillet over medium heat, add onion and red bell pepper. Increase heat to high and add ground turkey. Cook until browned, about 8 minutes. Stir in taco seasoning and chicken stock.
- Stir in Red Gold Petite Diced Tomatoes, Red Gold Original Diced Tomatoes + Green Chilies, pasta, corn and black beans. Bring to a boil.
- Reduce heat to simmer and cook for about 15 minutes. Uncover and stir every 2-3 minutes until thickened. Season with salt and pepper to taste.
- Remove from heat and serve with shredded Mexican cheese.
