Roast Beef Panini with Roasted Garlic Aioli
Lean roast beef is layered with cheese, onion and red bell peppers, and then toasted to perfection. Garlic becomes savory and buttery when roasted. Add it to a light mayonnaise and you have something special to spread on this sandwich!
10 garlic cloves, roasted and mashed1/2 cup light mayonnaise1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes with Garlic & Olive Oil 14.5 oz, drained8 ounces shredded roast beef4 slices Fontina cheese, or mozzarella cheese8 slices Italian bread, or ciabatta type bread1 red onion, sliced1 (6 ounce) jar roasted red bell peppers, drained
- Combine roasted garlic cloves, mayonnaise and petite diced tomatoes to make the Roasted Garlic Aioli.
- Assemble the sandwich by placing roast beef on bottom of one slice of bread. Then add cheese, onion, red pepper and top with Roasted Garlic Aioli. Top with slice of bread.
- Spread top and bottom of sandwich with olive oil to coat bread. Place on heated surface of Panini grill. Cook until bread is nicely browned and middle is heated.
