1 pound penne pasta, 16 ounceslarge pinch of salt2 pounds ground Italian sausage1 small yellow onion, diced2 cans Red Gold® Petite Diced Tomatoes with Green Chilies 14.5 oz1 red bell pepper, julienned1 yellow bell pepper, julienned1 orange bell pepper, julienned1 tablespoon Italian seasoning1 cup parmesan cheese, plus more for serving
Instructions
- Bring a large pot of water to a boil. Add pasta and a large pinch of salt, cook to package instructions.
- Heat a large skillet over medium-high heat and add the sausage. Cook until most of the pink is gone, about 8-9 minutes.
- Add the onion to the skillet and cook for 4 minutes until slightly tender. Add the Red Gold Petite Diced Tomatoes with Green Chilies, sliced peppers, and Italian seasoning. Cook for 10 minutes until the peppers soften. Stir in the pasta and parmesan cheese, then simmer for 5-7 minutes.
- Serve immediately with more parmesan cheese.
