Potato Salad
10 ounces frozen tater tots1 large cucumber, diced1 can Red Gold® Original Diced Tomatoes + Green Chilies 10 oz, drained1 can Red Gold® Diced Tomatoes 14.5 oz, drained1/2 cup fresh basil, chopped1 small red onion, diced1 can whole kernel corn, 8.75 ounce, drainedBalsamic Glaze Dressing
3 tablespoons extra virgin olive oil1 tablespoon Dijon mustard2 tablespoons balsamic vinegar1 tablespoon sugarkosher salt, to tastefreshly ground black pepper, to tasteInstructions
- Preheat oven to 425°F. Add tater tots to a nonstick baking tray, spacing them apart. Bake in the oven for 8-10 minutes.
- Take out of the oven and use a flat glass cup to mash the tater tots. Put them back in the oven, bake for 15-20 minutes more until golden and crispy.
- In a serving bowl, add cucumbers, tomatoes, basil, onion and corn.
- In a separate bowl make dressing by mixing oil, Dijon mustard, balsamic vinegar, sugar, salt and pepper.
- Pour the dressing over the salad and mix well. Add crispy tater tots right before serving.
