Ingredients

4-6 slices of bacon, cut into lardons1/2 white onion, diced4-6 garlic cloves, minced2 cans Red Gold® Petite Diced Tomatoes 14.5 oz1 tablespoon Worcestershire sauce1 1/2 teaspoons chicken bouillon1 can Red Gold® Sweet Basil Tomato Paste 6 oz, or Roasted Garlic2 1/4 cups of water1 dried bay leaf1 1/2 teaspoons Cajun or creole seasoning1 tablespoon red wine vinegar
Instructions
- Using a Dutch oven or large pot, cook bacon over medium heat until crispy. Remove bacon and set aside.
- Sauté onion in bacon grease until tender, then add garlic. Sauté for 3-4 more minutes.
- Add Red Gold Petite Diced Tomatoes, Worcestershire sauce, chicken bouillon, Red Gold Sweet Basil or Roasted Garlic Tomato Paste, water, bay leaf, and Creole/Cajun seasoning. Stir to combine.
- Bring to a simmer, turn to medium low heat, cover and cook for 10-15 minutes; stirring occasionally.
- Add okra and stir, bring back to a simmer and cook uncovered until tender, approximately 10 minutes.
- Remove bay leaf and add cooked bacon and vinegar, stir to combine. Remove from heat and season to taste.
