This is a super easy, quick, and favorable open face sandwich that the whole family will love. Great way to use up your leftover turkey. Complete the meal with baked fries and fruit.
2 cups cooked turkey, cubbed1/3 cup finely chopped celery3 green onions, chopped1 (14.5 ounce) can Red Gold® Petite Diced Tomatoes with Garlic & Olive Oil 14.5 oz, drained1/2 cup light mayonnaise4 whole wheat English muffins, split and toasted1 cup (4 ounces) shredded cheddar cheese
- Combine turkey, celery, green onions and petite diced tomatoes. Stir in mayonnaise to bind the mixture together. Cover with plastic wrap and refrigerate until ready to use.
- Preheat broiler to High.
- Arrange English muffins on baking sheet. Top with turkey mixture and cheese. Broil a few inches from source of heat for 3 to 4 minutes or until hot and bubbling.
